I'm pretty sure you can make a folder called (for example):
D:\SCS\
then copy your original Euro Truck Simulator 2 folder to that SCS folder on your D: drive.
Then add to Launch Options in Steam:
-homedir "D:\SCS\Euro Truck Simulator 2"

and copy all contents of original documents folder to this one THEN add -homeir "D:\SCS\Euro Truck Simulator 2" to launch options THEN play the game..
Wouldn't the game use it and not write a new sub-directory?

It will write another sub directory, i just have -homedir "D:\".
