Traffic density is not in the game, the streets are mostly empty. Empty cities, empty highways.... Car hauler jobs are usually very well-paying and only weigh 7 or 8 tonnes, so even with my old weedy 430hp 4x2 Kenworth I could pull them no problem. Tankers are also a good one for pay- if you can find them- but they tend to be between 14 and 21 tonnes, so not good for weedier trucks.

I'm not sure a full character customisation system is necessary (not like a GTA online or even FH4 kind of thing) but I'd be happy if the driver in the cab looked more like the profile pic we chose when starting the savegame.

SCS has significantly developed their map design over the years- look at Germany in ETS vs the Road to the Black Sea expansion. The ATS map is all newer, more realistic, and overall better, so even the non-DLC parts feel more lifelike.

I don't think it's specifically those trucks, as I've managed to roll other models as well. It's sometimes affected by trailers though- construction machinery is often very top-heavy, which exacerbates the issue.
