I usehave none on speeder, a little on brake to simulate the slight delay that airbrakes have irl, and on steering idont have none because ita new trucks we drive so steering will be precise.

Deadzones aren't generally meant for "realism", they're there because game controllers/steering wheels are not perfect and the zero/max positions aren't always accurate - you might have your foot completely off the accelerator pedal but the sensor is still reading 1% or something, which is important when it comes to things like retarders/cruise-control etc. Similarly you centre the steering wheel but it still registers an ever-so-slight pull to the left. Deadzones allow you to set , literally, a "dead zone" where the output of the sensor will not change, this filters out the inaccuracy/noise and allows the game to interpret the input only when you mean it.
