I've ran this CPU with all cores unlocked for three years, running heavy sims like DCS:Black Shark and Flaming Cliffs, dozens of heavy-load FPS shooters and a ton of other stuff. As I'm also a netsec guy, I dabble a lot in crypto and number-crunching stuff on this box. I have NEVER had an issue with this unlocked core until now. The modding and overclocking community run unlocked cores all the time, this is not some one-off thing. So yes, I suppose I did "create the problem". The fact that this is the ONLY piece of software that has ever had an issue running on this rig has nothing to do with it.
I've worked with the devs, together we found the issue, they gave enough credence to the issue that they will be releasing a fix in the next patch. I hope this thread might help others running legal purchased copies of ETS2 with similar configs that are experiencing the same issue.
Hopefully I won't need to come back for further help, as from what I've seen of some of the community here I wouldn't want to have to ask for anything else. I hope the majority are helpful and friendly folk, but the attitudes of some on here have pretty much soured me from getting involved in the community further. I'll leave it at that...

The proper way to solve this is to remove the game completely, by uninstalling it and (if applicable) deleting the Euro Truck Simulator 2 folder from Program Files.
Move the entire C:/Users/[you]/My Documents/Euro Truck Simulator 2 folder to a safe location and install a fresh copy, using your genuine DVD version and the official patch from SCS website.
If the fault continues to happen, then we can all agree it is a bug and it must be corrected as soon as possible!
If this does not happen again, then your profile is corrupt and you have to start fresh, probably.
