I'm driving all around the nicely detailed unmodded vanilla map, no mods at all.
With every truck I'm usually at around 5.5 - 6 mpg (+/- 0.5).
The best fuel economy for US trucks is between 63 and 67mph from what I know. I do stick to 65 with some of my trucks, but also run at 70, 75 or 80 with most of my other trucks. And I avoid California lol. Fuel economy is always going up there but I can't stand driving at 55mph, especially on some of their loooooong straight and mostly flat interstates.

My current trucks:

My 600hp Peterbilt 389 has an mpg of 5.1 at the moment. I use that truck for heavy hauls only and keep it at 65mph max on interstates. That's not bad actually, is it? ;)

I also created an eco-truck - a Kenworth T680 with a 450hp engine or so. Everything's focused on fuel economy on that truck - tires, rims, chassis. I use a 6x2 midlift on this one with the liftable axle almost always up so that basically 4 tires touch the ground only. I keep it at 65mph max. It also depends on the loads. I always haul box trailers with it. During the first 1,000 - 2,000 miles my best mpg has been at 8 due to a lot of leight box trailers. Job market became normal and more mixed after a little while and I now have a good variety of trailers, usually around 30,000 - 40,000 lbs. Right now, after 11,000 miles on that truck, I'm at 7.5mpg.

Best I ever get is 6.4 mpg. I wish there were more customization options with building your engines. Alot of O/O have wiring harnesses and parts that add mpg, and can get around 10 mpg. The problem with this game on getting good fuel economy is the scale. Going up a one mile hill ends up being 20 in game miles, so that becomes 20 miles of 1600 rpm in 8th or 9th at 1.7 to 2.5 mpg. I can average 6.7 mpg for 1000 miles, then one nasty hill will bring that down to 5.9. Part of the problem is the in game doesnt seem to calculate torque very well. I drive a tractor irl and these things do not have the problem getting up hills they do in this game. I can roll up a hill in San Francisco in 2nd gear using just the clutch and no throttle. When Im in a 13 speed Pete with a 615 hp chipped cummins, a 6% grade should't slow me down like what happens in game.

Due to the scale of the map, what would be a 10% gradient ascent on real roads, in game is actually more like 30% gradient.

7.6 mpg C15 cat 550 HP, 13spd RR, Thanks for making me feel good guys!

Anyone specializing in heavy or ST Loads will get bad figures, I mix it up from normal to very heavy.

I have done plenty of trucks in ATS configured for fuel economy, its not that hard to configure a truck for mid 7's with an avarage speed of 55 - 65 mph depending on where you go.

My favorite config, even tho I would probably avoid it IRL is going for super singles and midlift. The VNL right now has some extra engine options via an excellent mod, there are some really nice optiosn there that the vanilla truck dont offer.
Compounding turbo 13 liter D13 for example, and D11 engines. The D11 is real good on fuel and with 425 hp it has enough. Then I just run a iShift or maybe go for EF18 speed if I feel like I might be pushing things a little.

I'd say I can hold above 7 on the regular. Doing normal loads, 70 - 80k lbs gross weight. The best thing about super singles in the game is your truck start to behave more like the European trucks and trailers.
The US trucks has so much weight and more rubber in a tight area they dont like to turn and can be a pain. If you then go for a the GTM trucks with rear steering, its a dream. Never struggle with a parking again! And I only drive the 53ft trailers
with the wheels pushed towards the center to comply with California.

One trick I have used too is dubbles on the drive axle and then super singles on the steers and singles on the trailer.

And on the gradiant note, isnt like the highest allowed 7%? And are you sure about those 30% figures? does not feel that insane in game.

The Kenworth T680 is quite efficient in ATS. Whenever I haul a lighweight load, usually around 15-20k pounds in weight, I get about 8 MPG when traveling at 60 MPH. Although if the terrain gets quite hilly, that can go down to between 7 and 7.5.

My GTM Kenworth W900B (8x4 chassis, Cummins ISX15
565 HP engine and 13-speed transmission) almost gives me all the time 4.9 mpg, loaded or unloaded with heavy cargoes for which the truck is designed. Is that really bad? I have the feeling that the truck eats way too much fuel, with the simple 150 gal fuel tank I have to refuel every day in-game.
