as the guy who just transports it from A to B the gallon amount of liquid is pretty much useless, only the one who buys it is interested in the liquid amount of it and the one who sells it

I drive a tanker sometimes, the max volume of the tank is 26m3 (26000L)

I deliver Diesel (1202) and Gasoline/ Petrol (1203), the maximum weight I can load on the tanker is 20 tons so that's what I care about and what cops asked me about when I pull for inspection, as for the load volume if I'm delivering Diesel max load is 23000L and If I deliver Gasoline max load volume is 24500L, those numbers are on the manifest because (as carl said) they are only important for the petrol station I deliver to!

well because its in convoy it won't change because its a multiplayer mode.

i noticed a new soundref on the truck engines, sound_engine_rm.soundref, for what exactly is this, is it meant for convoy ?

I beleive rm = remote and for convoy for other players to hear your engine.
