I got as close to that fence as I could but trailer still got suck

You need to stay on the left side of the entry. Then turn towards the scale just when you need to avoid hitting the wall in front of your truck. Make sure you keep your truck on the left side of the scale as much as you can and also parallel to it.

Agreed, stay left, go straight to the wall and then follow the wall to the right and bring the truck onto the scale at the last moment. Even with the spot you ended up, you could have backed out of it and tried again, no need to cancel the job.

Yeah, you can back with the dolly, you just have to go slow and correct direction quickly. You have to think about driving the dolly, not the truck. It helps to use a steering wheel and to have a short wheelbase tractor. Even if it jackknifes, you can just pull forward enough to straighten the dolly and that will usually only pivot the trailer slightly. Being confined in the scale is both a good thing and a bad thing. It's good since you can cheat a little and use the rail to keep the dolly straight, and bad since it limits how much you can turn the tractor.

That image above only has one pivot point. That isn't one from the heavy haul package with the multiple pivots. Backing up should have been just as any other trailer.

On my phone I couldn't tell but now on my PC it doesn't look to have a dolly. I don't think the dollies have tail lamps in the game, or do they?

The Treyscapes dollies do, yes. (EDIT the stock SCS dollies do as well. Makes sense, dollies are tagged as trailers IRL since they can be pulled alone)
But heck going off just the lights, you can see the glow of the truck taillights, just barely visible beyond the dolly, even without zooming in.
