retarder was too strong. this seems closer to reality.

lower retarder levels you wont recognise at all. IRL many drivers went over 100km until they register indicator or switched the control. one trick that is used is to drive with first level of retarder on, the engine must work a bit harder and is faster to get to the optimal temperature.
Nobody can tell you anything about it. Those who know about it aren't allowed to talk. And those who talk know nothing.

So which is best?
5-stage retarder or 3-stage retarder?
I've been using the 5-stage ever since its inception. I find the first level is good for 'trimming' the truck's speed before corners.
If you suck at playing the trumpet, that's probably why.

I can say, one of the European Volvos I've been in had 0, 1-2-3 stages for the retarder.

That's a bit like asking if an Allison transmission's better than a ZF transmission, or is INXS better than Mental As Anything. Each has its place and purpose in the scheme of things. IRL our Scanias have a 1 stage retarder (with dry and wet mode) and it works fine for our purpose - far better than our previous truck that would launch the uninitiated through the windscreen.
Never argue with idiots. They bring you down to their level and beat you with experience.

You're right. 5-stage it is then.
