Fire trucks in Poland are red with white bumpers and white wheel arches. Locker curtains are usually aluminum in color. The obligatory element of the marking is the operating number located on the sides, on the roof and on the back. Fire trucks use blue lights.
The vehicles may have additional markings, for example the logo of the State Fire Service on front doors, the town or commune coat of arms, the inscription "STRAŻ POŻARNA", telephone number 998 or 112.

Numbers include: prefix [infix] sufix
Prefix stands for an organizational unit, infix stands for the voivodeship and sufix stands for the vehicle type
IMO the best solution (apart from a separate number for each city) would be to put the number on Polish fire trucks in ETS2:
301 [X] 21 for Dennis
301 [X] 25 for Tatra
Prefix 301 means the Rescue and Fire Fighting Unit No. 1 (firestation no. 1) in the voivodeship capital (each city available in the game is the capital of the voivodeship), 302 means the Rescue and Fire Fighting Unit No. 2 (firestation no. 2), etc.
Infix [X] is a placeholder because it should be different for each city in the game. Warsaw = [W], Poznań = [P], Szczecin = [Z], Wrocław = [D], etc.
Sufix 21 means medium rescue and fire fighting engine (also 22, 23, 24), 25 means heavy rescue and fire fighting vehicle (pumper, also 26, 27, 28, ..., 34)

What I wrote is general rules, there are local exceptions to these rules, especially in voluntary fire brigades, which often buy used fire trucks from other countries.

There is no separate painting scheme for fire trucks from Warsaw (capital of Poland). The operational number of fire engines in Warsaw contains the infix [W].

There are several types of vehicles which are adapted to different interventions

Here are the main ones:

The first vehicle is known as a emergency rescue vehicle, most fire brigades are dismayed by this type of vehicle. The main variations of this vehicle are the cube VSAV and the sheet metal VSAV.

The second vehicle, known as an emergency vehicle, which intervenes in traffic accidents (road, rail, etc.). Some VSRs are adapted to intervene on railways, particularly in tunnels, where the conditions of intervention are all the more delicate.

Each fire brigade vehicle is marked with the logo of their respective SDIS (Service départemental d'incendie et de secours)
VSAV and VSR vehicles both have the firefighter's call number. Please note that the VSAV has its full name on the vehicle.

Fire trucks in England in the UK are all red with red and yellow battenburg markings across the side, sometimes you will also find 'FIRE AND RESCUE' written on the side above the shutters, sometimes 'FIRE' is written on the front (in both directions so can easily be read in drivers rearview mirrors), also you will sometimes find the forces crest on the side by the doors, on the rear is red and yellow reflective chevron markings.

With regards to lights, fire engines in England in the UK have an all blue lightbar on the roof and blue and white grille lights on the front grill and also blue flashing lights along the tops of the sides.

Hello, I would like to talk about Spanish Fire trucks. Spain is a difficult country to model a fire truck because each Region and in some places even each city council has their own fire departaments with their own colours and in some regions with lettering in a diferent language than Spanish, but there are at least two cases of fire trucks that are the same for all Spain.

The first case is the Airport fire truck or the 6x6 fire truck currently in traffic.(The tatra 815-7 one)
In Spain that type of fire truck is only seen in airports and all Airport infraestructure in Spain are owned and gestioned by a public company called AENA.
AENA has their own fire departament with all of his trucks painted the same colours no matter what airport you are.
They are painted red with one stripe on the middle in two colours black and yellow, the logo of aena(in white) in the laterals and a big letter and number(in white) usually B, here some examples:

Other fire trucks that are the same colour and lettering in all Spain are the ones from the "UME" (Unidad militar de emergencias- Emergencies military unit)(Other great oportunity for the 6x6 tatra since the UME has big 6x6 tankers), an emergency unit of the Spanish army created to help in big catastrophes, like: floods, forest fires, heavy snow temporals, earthquakes... or to act when a fire department of any region need help with something.
The trucks are painted red, with a big yellow stripe and the letering in white displaying UME in the front and on the laterals "Unidad militar de emergencias" and the emblem of the unit.

The fire trucks from the UME can be seen in all Spain, so maybe they are a good adition to the AI traffic in Spain.(Maybe that make it a good fit for the current Tatra 6x6 in game as a forest fire truck in UME colours)
The only problem with them is that they don't act in small traffic accidents, they only act in big catastrophes usually helping the firefighters from the region where the event took place, (usually in winter floods and snows and in summer forest fires and floods) so probably they aren't very acurate to spawn in the current ramdon events, but if in the future the game has bigger events they are the ones for the job(floods, forest fires...) anyways they are a great addition to Spain AI traffic.(But their colours could fit well in the 6x6 currently in game.)

Other thing that could improve the current fire trucks in game is have diferent models of fire trucks for Spain.
A generic one for all the places with spanish as main languaje, based on the most comon caracteristics of all fire departaments.
which in my opinion should be:
Red base colour, yellow reflective stripes and white lettering (Bomberos and 112), and some parts like bumpers and roll cages also in white as you can see in examples from diferent departments:

And for the Regions with other languages you have two options made a generic one without any words or made each Region specific fire department truck (Cataluña, Galicia, Pais Vasco and Valencia, 4 diferent in total, each region has their own regional fire department)

Edit: Don't pay attention to the Amber lights on the photos currently before 2018 blue emergency lights in Spain are only allowed for police, but since 2018 are mandatory for ambulances and fire trucks, so currently we are in the middle of changing all fire trucks and ambulance lights to blue.

I know that this is not exactly what was asked for but i forgot to mention it on my post.

The current in game small fire truck, in my opinion looks too british to fit the rest of the in game countries (With the big gap in the middle to carry the ladders, usually the european standar small pump/rescue don't have that empty gap for the ladders the roof is flat and the same height all the bed and with the small ladders on it), i think you should reconsider to in the future add a new vehicle model (Or new back part of the truck, the bed) for example in the Rosenbauer website you have multiple examples of firetrucks of diferent countries and uses.

And I like to suggest also the addition of two new fire trucks models:
  • One with a ladder, that can bring the posibility of have aleatory events inside the cities that make the streets narrow or close the street and make you take the next one. (like fires in buldings, industrial fires, or even the rescue of a cat...)
  • Small 4x4 forest fire truck(Unimog,Renault K, Iveco Trackker, Man Tgm 4x4...), that can also bring the oportunity of new aleatory events (like fires of vegetation near the road that shut down one lane, floods near the road that need to be pumped, forest fires in the distant scenery...)
