Yeah an Iceland + Ireland DLC and maybe having Northern Ireland added as part of a free update. As some others have mentioned, doing this DLC whilst revisiting the UK seems like a great idea. Northern Scandinavia is pretty big as it is, and despite having a very low population density it has no shortage of roads and interesting places than can potentially be included. Putting Iceland and Northern Scandinavia in the same DLC would mean both would potentially get less stuff.
Also, as far as I know, ferries from Iceland go to the existing Scandinavia (specifically Denmark and Bergen), not the Northern one, so in terms of connections it is no better to group it with Northern Scandinavia than with Ireland.
Also also, Ireland would be located in the UK's hardcoded 1:15 scale zone, so unless they change it or work around it, Iceland would have to be slightly bigger (and therefore require a bit more work) than may seem at first.
In my opinion the best course of action would be to just release Iceland as a separate DLC - perhaps a smaller one like those in ATS.

Size of ETS2 DLC is already bigger than 2 ATS DLC (not to mention the size of Iberia one) and so the crew involved. If they had not still moved to the multi-DLC per year on ETS2 is pure and simple because it would had no sense. Romania could had had the size of an ATS DLC, but what to do with Bulgaria and the part of Turkey? 2 DLCs cutting in half Romania? Other previous DLCs had similar problems and Iberia was a bugger due the Different sizes of Spain and Portugal and having Madrid placed so centered. The only DLC that they could had done of the ATS size and would had had sense would had been one with only Estonia, Latvia and Lithuania. But then they would had to done in a completely different order the rest of what we got in that DLC.
The ATS smaller DLCs style could start to be used soon although; as half of what they had to do is in Russia (that they can cut easily on the size they need) and the rest of the zones can be partitioned to be smaller. Ex-Yugoslavian countries can come without Greece (I suppose that would hurt you if it means to wait more for it) and put Greece together with Cyprus or another small chunk of Turkey. Ireland plus the bits remaining of the UK already have the appropriate size for a semi-annual DLC. Iceland could come with northern part of Norway While Northers Sweden is big enough to fill its own DLC...
There are possibilities to work this way; a different question is if for several other reasons we don't know that's not feasible for them. But it's not a question of staff for sure.

no, not really, you can drive from Europe to Africa perfectly fine, and Africa uses european truck also

support the idea of SCS Software to make an Africa Truck Simulator.
The game is interchangeable with Euro Truck 2, it means the following:
"if you have for example DLC Iberia, DLC Malta, DLC Italy, just a small example. Then you could accompany DLC, Morocco, DLC Algeria and Tunisia, for example traveling between continents".
Then you could make this call, and so on.
I think it would be extremely interesting that these Great projects to make highways on the continents, the games were interconnected especially: Africa, Asia and Europe.
Because it's actually the same gigantic landmass.
But I am of the idea that the design of the European map must be focused on the physical boundaries of Europe.
Because you don't lose much sense of continental projects.
My personal opinion, yes, I support the idea of having a truck simulator for Africa, another truck simulator for Asia, another truck simulator for Australia New Zealand and Oceania (where particularly in the countries of Oceania are small urban trucks).
And it would allow young people and people who decide to play in the future to get to know the countries, to know what is the routine of truck drivers in these countries.
Although they are trips of few minutes (real time) for example Tuvalu, Nauru.
But it would be extremely interesting to know the landscape, economy, monuments. Knowing types of small urban trucks are used in these countries.

creating an African Truck Simulator doesnt make sense, at all, they would have to go to all manufacturers again and ask for a license, again, expanding ETS2 to Africa wont have this issue and you even have the older trucks that you will find more likely to drive in Africa then the new TGX, Actros or Scania R/S
ETS2 is NOT about EUROPE, it is about European styled TRUCKS, so an African Truck Simulator would be just a wast of money and time if 80% to 90% is already done with ETS2 and all the legal nonsense can be avoided because it isnt a new game they develop

Talking about North Africa of the whole of Africa is more than unrealistic in some future years. Personally, I would not like to see any parts of Asia or Africa in ETS2.
SCS should first finish Europe by DLCs and expanding DLC's and re-working of the base map and older DLC's.
Regarding names, Euro Truck Simulator is about the European continent.

no it not, it is about European styled truck. period, it is called EURO Truck Simulator and not EUROPE Truck Simulator
same as American Truck Simulator is not about the US but about american styled trucks
and expanding ETS into Asia and Africa is a more logical reason then to start a new game from scratch where you loose more then 50% of the trucks we have, on the other hand ETS could also gain Asian and African (do they exist?) trucks, SCS would be pretty dumb to burn money to create this game, Australien Truck Simulator on the other hand would be the better choice for a new game
