I've seen between 32-37L/100km

Wow! I never achieved that, not even on mainly downhill routes.

I've gotten into the low 30's range before with the more modern Euro6 trucks like the Range T, but honestly it's so dependant on the route I just stop looking at it. Like you do a nice straight run through germany to Hungary. The roads are relatively flat and there are minimal stoppages.
Then drive anywhere with toll roads, the fuel economy always takes a hit as you usually have to either come to a stop completely like in poland with no auto toll, or slow to 30kmh in countries with the auto toll. Then waste even more fuel to get back up to 80/90kmh.
Then you have the hilly parts in scandinavia, the constantly changing speedlimits in the baltics and Romaina lol I want to see someone getting good fuel economy there.

With Volvo FH 750 I get something between 35 - 40 l/100 km. With Iveco Hi-Way 560, between 32 - 36.
The best what I ever got was 24.x with that Iveco. It was in a trip from München to Berlin, through A9, with a Flatbed trailer with 9t of load.
NOTE: I always reset dashboard trip info before starting a job. So, these numbers reflect the average consume just for one job!

I generally use the New Actros and UK MPG, but 35-32 is fairly normal if not doing heavy loads. Not done a long-term test but it rarely drops as low as 40l/100. Big factor is the road incline too I guess. Amsterdam to Hamburg and back will get you much better numbers than Inverness to Newcastle.

Now you're hitting the nail on the head for me.
This is one of my key focuses while driving. Currently in the process of getting each of my fleet to 40000km. My general aim is to get them all below a 28l lifetime average. I make extensive use of eco driving techniques where possible e.g as much lifting off as possible, even when going up hills (to a point of course), rolling towards red lights trying to predict them, rolling in neutral (here it is likely to save more fuel over staying in gear due to the length of time being in neutral outweighing the fact staying in gear uses 0 fuel). Just got the Stralis 310 down to 30.9, in fact, switching units for a second, I have one journey (albeit with the 4t vent shaft) that calculated to 14.58mp(UK)g. With it being cheapest truck in the game with lack of retarder, it rolled down hills quicker, thus spent less time coming back onto the throttle. Renault T 520 went down to 27.2 at one point. S730 currently is 47l (albeit an 8×4 used for heavy haul) so I need to try & get that down. Tolls are annoying, but you can go through most of them around 35. RttBS really hurts eco though. If you know there's going to be a 50 zone coming up soon there's no point accelerating back up to 70 or 80. I avoid 90 even where permissible.& if it doesn't change to 12th at ~1500rpm at 80km/h (using realistic auto), I manually shift from neutral & back to D & it's then in 12th.

In my current profile after 31 jobs with DAF XF, my average fuel consumption is 32,28 l/100 km. I use Pardubak's EconomyMod, so I've tried to pick up jobs that pay reasonably well but have low weight. Average weight is now at 14,8 tonnes.
First 10 jobs were with 4x2 chassis and 410 hp engine, then for the next 8 jobs I updated the chassis to 6x2/4 midlift and the engine to 460 hp. For the last 13 jobs I've used the most powerful 530 hp engine.

My game experiences:
Engines: For light cargo(3 to 12T) you should go with 420HP and lower engines. For middle cargo(12 to 24T) 420~480HP(maybe 500) engines. For heavy cargo(25T+) 500HP and higher engines.
Transmissions: DD transmissions better for current game roads. Mostly highways and flat roads.(You can try galimim's Drive Train Revision mods for different transmissions)
Tires&Axels: More tires = more fuel consumption. 4x2 is best(fuel efficient) but if you haul heavy cargos, you want stability(6x4 or 8x4/4). Midlift and taglift variants useful when you haul light cargos. Lift axle, then you have 4x2. Another useful option is trailer's liftable axle. You can lift trailer axle too with light cargos(i'm using this option under 15T cargos).
Driving Style: Use terrain to your advantage. Don't try to accelerate uphill. You don't have to be at top speed always, you have enough time for your deliveries. I'm currently driving 360HP 4x2 Stralis with 23l/100km(3T to 23T cargos).
