The truck grows on me. I don’t think I would switch to Mercedes or Scania anytime soon. It was easier for me to adapt to the cameras.
I like the way DAF focused on minute details, especially with the cruise control details in the DIP. There’s no need to switch between screens to know the CC and the consumption details, unlike Scania or MAN.

Is there any way to see the remaining amount of fuel you have in the DAF XG+ through the different displays?, I have tried to look, but I could be missing something?

You can see the fuel as a percentage % on the bottom of the dashboard.

If I'm not wrong, that's common to all trucks (included previous DAFs) with the exception of those Scania and MAN you mention. So, it's not that DAF has done something good and new here; it's just they had not screwed something that already worked nice and well.

Agreed. I initially thought I had to switch here - then I noticed that green line in the speedometer and I liked that design.

DAF are good like that. This new cab design is as much of a game changer to the outgoing XF that the 95ati was to the old F241 (2800, 3300, 3600 etc) and the 95s cab evolved into the 95xf, then to the xf95, then to the xf105 and the xf106 so its been around awhile, this new cab will last a while, diesel engines will go away and DAF's new truck with fuel cell tech, hydrogen engines or what ever they choose will probably have the XG cab

How strange! Whenever I enter a profile (vanilla or not) and I take a look at Daf 2021 in the browser, I see this red front grille DAF band:

Should I start a new job (o re-start an old one), anyway simply entering the cab of "my" truck and then pressing ESC key to interrupt the simulation to get back AGAIN in the truck browser, I see such band in its correct colour.

I've noticed this behaviour under macOS OpenGL, and I don't know if this happened also under Windows DirectX (but I guess not, otherwise you guys would have reported it).
It's just a cosmetic matter and it corrects itself every time automagically (!!), so I am unsure if even classifying it as a bug. To my understanding, my logs don't show anything pertaining such behaviour, so it would also be difficult to comprehend what's happening, I guess… But it's funny.

dont think so, however fill up your tank, drive till its empty and see how many KMs you did in the tank, then you should be able to estimate from that
