I understand that it's frustrating, but it's not good to throw that frustration toward people in here trying to help (independently that if it seems their advises are good or bad).
Two more possibilities to check in those cases are is to test game files from Steam GUI (something I recall you already did maybe?) and to be sure your GPU is not applying any specifically configured profile only for ETS
And yes, devs can read the crash log (in most cases, that log is only useful for them). If the problem is the same without the plugin, then that's the best option left.
PS: the fact it's an M.2 is not a problem. The fact the SSD could be defective and corrupt the files could be a problem. But Steam file test should had detected that already if it would be the problem.

The GPU is applying the global settings for ETS2 in the Nvidia control panel. Maybe to test to set the max FPS to 60 and try.

I had contact with the SCS Support, they give me the hint to deactivate some background processes. I disabled Aorus Engine, GSkill Trident Z App, Samsung Magician and some other. Now i had a 900km Hamburg - Strasbourg turn and no crashes. Maybe that was the solution, but i will test it further.
