Today I noticed it too on a moderately sharp bend on a shallow incline. For anybody wanting to try it out. It's a small and quick motion that feels somewhat like a quick version of those suspension test tracks where your left and right wheels drive over small bumps one after the other. And as TruckSimFan says, this also causes the top to go side to side a bit.
It's no a huge problem, just a bit annoying to look at.

Maybe a more detailed model is needed for the corners? Less polygons = less flex, even more so if the polygons are quads.
There are not that many sectors that make up ETS2 corners, & if the collision model is based off the corner model (or has less sectors than the corner), then you are going to have this problem on uneven ground (ie up or down hills). This kind of problem is not seen on a flat surface as the model/collision model is flat. The steeper the incline/decline the more "stepping" you will get between the polygons.
The answer to this problem (IMO) is, triangulate your polygons or add more sectors to your curves.

It used to work fine on the current road geometry with the pre-1.9 physics, so it may just need a little tweaking.

I just did a long drive in 1.9.20. I avoided motorways to test this and the effect is still there.
