Yeah, you can do that. If you wanna use Photoshop to do this, you'll need the DDS Plugins for it so that it can read/write .dds (DirectDraw Surface) documents. Once you do that, you can open one of the cab templates and get started. It's my advice that while in production, save and load as PSD. When the paintjob is ready for testing, save as .dds
You mention Ai. If you are more comfy with Illustrator for drawing vectors, then you can copy'n'paste those vectors outa Ai straight into a layer in Ps as a 'smart object', or simply as pixels.
Be carefulwhich cab template you use from which folder. alt_uv set 'false' means the template show one side of the cabin and any paint there is reflected to the other side. 'true' means you see both sides of the cab and can paint them separately. This is best for placing text on the truck.
