Some Russian Ford Explorer police cars. From what I heard, these are just regular civilian Explorers made in Russian plants (not the Police Package sold in North America). Model already exists for ATS, so would just be a matter of porting it over and applying a new diffuse map.

Hungary

There is a fantastic website with pictures of all Hungarian and some foreign emergency vehicles (not just police): http://policecars.hu/p/index.php?lang=english
Also the current Ford Focus should be removed from the game, as it was never part of any police fleet here (I've only seen a picture of a single vehicle like that).

The fleet is very young even compared to other EU countries and they are regularly replaced.
After the last fleet uprgade in 2019 the most common vehicle is the Skoda Octavia III Combi (2017 facelift).
(I'd expect the successor will be the Octavia IV Combi, they have a few of them already).

Almost all cars are painted white (auxiliary police cars are metallic silver, but those are rare) and have a uniform livery across the country.
The "Rendőrség" lettering uses the Helvetica font. I don't know the exact red and yellow color, but the blue is legally "Pantone 294 C"

Beyond the stripes, these are the mandatory design elements (112 number, "Telefontanú" sticker (16x16cm), "Szolgálunk és Védünk" stickers, police shield).

They are equipped with the Hella RTK 7 lightbar (blue-red) and a rectangular blue led flasher behind the windshield:

I'll write a post about ambulances as well in the appropriate topic.

This website shows the different Skodas used in European countries. Although I'm not sure how common they are in each mentioned country, it could be quite useful.

Volkswagen Passat
I saw that Finland also uses the Skoda Superb Combi, which like the two cars above exists in game.

The Transporter T6 is also quite common in Lithuania too.

In-game, the Ford Focus (hatchback) is used for Russia. I am not sure how common they are in real life, if they exist at all. It seems it may have been chosen based on the much more common Ford Focus Sedan.

Belgium
Police fédérale de la route/Federale Wegpolitie (WPR)
They are a division of the Belgian federal police, and by far the most common sight you'll see on Belgian highways law enforcement-wise.
Many of their current cars do not exist in ETS2 saddly.
Livery wise, text in dutch will always be on the left door and trunk, while text in french will always be on the right door and hood, like every federal police car with bilinigual markings.
Sometime, the divisions where the car is from will be specified, and usually, these province-specific cars will have their markings written only in the local language.
WPR cars will have an orange stripe on their livery and an orange square on their roof number as shown below.

Zone de Police de Liège
The police service of the city of Liège.
Liège police uses a livery that's entirely written in french.
Most of their vehicles feature their logo.
[ external image ]
Unlike federal police cars, local police cars have a 4 digit roof number.
[ external image ]
Also unlike federal police cars, local police cars always feature another 4 digit number which has nothing to do with a unit number but simply represent what local police this car is from.
Federal police cars do not have any similar markings.
Liège police, for exemple, is 5277.

Zone de police Bruxelles-Capitale Ixelles/Politiezone Brussel-HOOFDSTAD Elsene
The police service of the city of Brussels and the city of Ixelles.
Livery wise, text in dutch will always be on the left door and trunk, while text in french will always be on the right door and hood.
Some cars, especially newer also feature the logo of Brussels police.
[ external image ]
Vehicles used by Brussels police will also often feature yet another 3 digit number, which I totally ignore the meaning.

I noticed the Russian police cars got a new skin (just a minor update, they fixed the inaccurate circular door emblem with the correct eagle one).

The Romanian police, since 2020 (a few months after RTTBS release), has applied a new paint job to almost all the police cars, as following:
