Louisiana is home to the most productive seafood industry in the lower 48, with 'bout 1 billion pounds of seafood landed in Louisiana each year for commercial sale.
There are a few fishing ports that would serve well to represent the seafood industry in Louisiana:

I would mention Venice, Louisiana, but I doubt anywhere near LA-23 will fit. New Orleans will probably eat up that whole area.

A few more specific trees/plants you may see round Louisiana are:
Banana Trees which are usually used as flora instead of for growing bananas, these are very common.
European Fan Palms which I have only seen in a select few places.
And Christmas Palms, which can be mistaken for Royal Palms as they look very similar but are two different species.

Maybe not LA-23, but this image from the research trip is called "Beach-near-Port-Fourchon,-LA-(5).jpg". Not proof that it will be mapped, but I'm guessing they had a business reason for driving out that way.

I assume we have a good possibility to get Port Fourchon in the game, not as marked but for a Depot. It's westward enough to not be eaten up by NOLA and has plenty of water to work with n' expand the borders of the map to make room for it.

Aquafarms are a big part of Louisiana's Seafood Industry with Fruge Aquafarms alone producing 3 million pounds of crawfish each season.
These tend to be rice fields which seasons are concurrent with crawfish season. Small Crawfish are dumped in with rice crops in their canopy stage protecting them from heat and birds. After a few months when the rice is ready to be harvested, the fields are flooded with 2 feet of water to get ready for crawfish harvesting. Once the crawfish are harvested the fields are drained, another round of rice is planted, and the cycle continues. Thanks to Aquafarms like Fruge (Fru-zhay), Crawfish turned from something that somebody would occasionally have into a giant industry.
There are also many other types of aquafarms that contribute to Louisiana's economy including: catfish, alligators, oysters, tilapia, baitfish, crabs n' more. But I'm sure that trying to include all of that without missing out on other industries would be impossible for 1:20 scale. The three main largest segments of Louisiana's Aquafarm Industry are: Crawfish, Catfish, and Oysters. So, to represent the diversity in this industry without going overboard, there could be 3 locations. One for Crawfish, one for Catfish, and one for Oysters.
A good location for the Crawfish Aquafarm would obviously be:

These depots will need an entirely new company, Fish Tail Seafood wouldn't suffice for an aquafarm. If y'all decide to add any 1 or more of these aquafarms to the DLC and make a new company for them. Try not to make the company look all modern and bland, it wouldn't be authentic for both this industry and this part of the country. Here's an example: https://imgur.com/a/QR5YeUx
Don't copy it completely of course 'cause this is a real company XD, but that kind of style is what I'm talking 'bout and should be replicated in some way.
Also, with this there will need to be new cargos. The current Seafood cargo could be renamed to "Mixed Seafood", and then have Crawfish, Shrimp, Oysters, and Fish added as new cargos.

Some references for New Orleans RTA Street Cars
These are very iconic symbols of NOLA and would need to make it into the game unless it's planned for no roads to go anywhere near downtown.
There are two different streetcar types used for 4 different lines.
The oldest being St. Charles Avenue which is actually the oldest continuously operating streetcar in the world!
The St. Charles and Loyola lines both use the older green streetcar seen in the bottom picture. Meaning any visible streetcar line on the left side of US BUS 90 should only have Green Streetcars.
While the Canal and Riverfront lines use the newer red streetcar with more amenities and an extended roof. However, every streetcar line intersects on Canal Street so both Green and Red Streetcars should be seen on the right side of US BUS 90
