As has been said the games do not support raytracing. What you were probably seeing was a comparison between ETS2 and a Raytracing Reshade. As far as I am aware that is a paid project so I won't be discussing it any further.

Once we get confirmation that DX12 and the game engines changes being released this would make for an awesome Under The Hood type blog.

I think Kunos managed with Assetto Corsa Competizione in less time.
(They migrated from their own-built engine in Assetto Corsa to UE4 in Assetto Corsa Competizione. iirc they also managed to carry over a good amount of their own code.)
Of course every project is a bit different, so sure it could be that it would take longer in case of ATS/ETS2.
I think though that the main problem not being considered here is the type of problem that may come up. Again, taking AC->ACC as an example:
Kunos had huge issues at the beginning implementing VR support and support for triples. Performance is also a big deal.
While ACC looks fantastic, especially the weather effects, the performance is much worse than for most of its competitors.
Which is a big deal if you have people trying to use it in VR or on triples.
Don't know how many people are trying that for the truck sims, though.
Personally, I don't have an opinion on for or against UE5. This question is too project-specific to be answered by an outsider.

@Berniyh UE5 would be insane for this game. I think SCS should get rid of this old and outdated prism3d engine, and replace it with a better engine, at least ue4. But UE5 would be the best experience in this type of game.
