There's a video on Youtube by AP 101? IIRC...It shows moving the server files from the 'Documents/ETS2/ATS' folder TO the 'Dedicated server folder', which you shouldn't really do/need to do.
When you run the "export_server_packages" command in-game, the files are generated in the documents folder for ETS2/ATS.
That may be where some confusion is coming from.

I did all that and I can get the server to run, I just can't get it to use my server setting like session name and description like what you would see in server_config.sii

I was really hoping that dedicated servers would allow everyone to download the mods off the server, or lock the mods to a certain version so as to avoid the different version fiasco that haunts convoy now. My friend and I will spend sometimes upward of 10-15 minutes trying to get each of our games to have same version of mods... when both our have our settings to update automatically via steam. One by one "who has the newer version of xxxx mod?" It's obnoxious. I was expecting more than we got I suppose. I know on other dedicated servers, the game streams any mods or content changes FROM the server side. I'm thinking of the FiveM servers mostly here.... the few times I've been on those, I didn't need to have the hundreds of mods running server side to play in a group. Just get the credentials/login and it all streams to you.
Eh... for me, it's really no different that just hosting a convoy session. If one person leaves, okay... the host leaves? someone else makes a new session. I was really hoping for more out of the dedicated servers. But they are in their infancy, so hopefully at some point: server side mods will stream to users logging in.

I don't know where you need so long to update mods, but I have a DS running with a friend. We've updated the mods once and that's it. Steam Workshop mods keep themselves up to date. So unless a new ETS version comes out, you don't really have to do much. And on the subject of different versions of the mods..... We had the AI Traffic mod from jazzycat inside. It worked fine for 2 days and then a wrong version was detected. No one has changed the files updated or anything. I think that is rather a mistake SCS sided. Another example..... I had a physics mod where you had to change the def of the trucks. I changed the values, my buddy didn't.....see wrong version detected. I think if you know what you have to look at it is actually quite uncomplicated. Sure it could be easier, but we are only at the beginning of the DS in ETS and ATS.

and then everybody has to do it if they want to or not, so do not touch Workshop mods an be "clever" (you are not) and make it harder for people who cant do it and just want to play
