I am not sure if this belongs in the Tuning thread (or more part of the rework) but when looking thru the W900 there was no option for the newer engines such as the Cummins Efficiency or Performance lines.

Not sure if it will be odd / out of place to build a modern 389 (or 389x) with the digital cluster and have a Cummins ISX as the engine (probably not / I'm overthinking it lol )

It will be odd. Those engines are discontinued IRL.

And I don't know why SCS simply refuses to update the engine line up when a truck get's updated. And that makes us, the players, go do what they should've done in the first place.
